This whisky was originally released by Sullivans Cove in September 2021 and was available exlusively from the distillery door (as opposed to being available online). It comes from Sullivans Cove very rare "Special Cask" range - in this case, they used a single French Oak cask which had previously been used to hold and mature Apera (Australian "sherry", see note below).

Tasting Notes, below, were supplied by the Distillery, along with the following "Overall
Comments": "There's a lot of interest and nuance here, and a feat has been achieved in holding it all together harmoniously. The French oak is the enabler; it allows these Apera nuances visibility with no insecurities: everyone gets a turn on the stage and the reviews all say it's a hit."

 

NOTE:  "Sherry" recently became a geographically designated term (like "champagne" which needs to come from the Champgane region). So it now needs to come from Jerez, Spain to be called "sherry". What we produce in Australia that we used to call "sherry" is now called "Apera".

Tasting Notes

  • Colour: 
  • Nose: Wafts into the nose and doesn't mess around: pepper berry, mint, plum blossom and crispy ripe apples. There's a lot going on here! Orange oil, dill, pomegranate molasses, and cola syrup… Juicy berries. It's not all an Apera smoke-show though, a nice dusty biscuit note is in there too as a reminder of it's malty origins.
  • Palate: Palate gets down to business, too: Persian dried lime, brown apples, malty biscuits, pineapple glacé lumps, pomegranate juice, coriander leaves. This flurry deepens and calms into a lovely deep funk which is almost Rum-esque, or grenadine. A medium-bodied texture and light but balanced grip is just the ticket to handle the menagerie of characters here!
  • Finish: The palate flows happily through to the finish, where there's more pineapple lumps, a hint of ginger bitters and a juiciness. The rum note comes back, now with lemon lime and bitters, and a lot of grapefruit; there's a remarkable depth to the citrus. Dried apples and dill bring a fun lift to the back of the finish.
