Coming from Sullivans Cove's highl prestigious and sought-after Old & Rare Second Fill American Oak series, this whisky was matured for over 17 years in a single 300 litre cask made from American oak. Prior to holding this release, the same cask was used exactly once previously to mature and earlier Sullivans Cove whisky.
Second fill casks display the distilleries character loudly and proudly. These casks were purchased in the mid 1990s when they started their life as virgin oak, and they have only ever matured Sullivans Cove's own single malt whisky – no bourbon, no sherry, nothing else. Second fill casks allow for long term maturation, without being overtaken by the influence of oak or pre-fill. The result is a whisky in perfect harmony: our signature spirit character is met by a soft oak profile, allowing the fruity esters that come from our copper Alembic still, Myrtle, to shine.

"TD0064 is an absolute treasure. A graceful, warm, complex, and comforting tapestry of heavily evocative flavour. The Sullivans Cove signature blend of sweet citrus’, tropical fruits, and subtle earthiness strikes a wonderful balance with the gentle puckers of tannin and sweet old oak nuances imparted by a slow, 17-year maturation. By the grace of second-fill American oak and the skill, patience, and restraint of the Sullivans Cove production team, we have a really spectacular, really old, really memorable whisky."

Tasting Notes
- Colour:
- Nose: Earthy, oaky, full of warm fruits and baked grains. The nose opens with oat clusters and honey, peach, Anzac biscuits and flamed orange. The toasty oak-driven notes move through the sweet citrus and fruit of Sullivans Cove spirit wonderfully. More spirit-derived fruits come next (mandarin, heaps of stone fruit, dehydrated mango – a classic – and a grapey musk), and rest atop an interesting bran cereal, scorched earth, and red clay depth. In the background, there is a flicker of aloe vera and cucumber that compliments the earthy depth brilliantly.
- Palate: Moving to the palate there is a light yet puckering swell of tannin and sweet, old, quality oak. The spirit comes in thick and soft with huge swells of taffy and finger bun icing. The fruits are jammy, tropical and sweet with a puff pastry and honey-soy edge. As the whisky opens with air the palate becomes even juicier with more mandarin, nectarines, golden kiwi and orange blossom. The base remains earthy, deep and alluring as notes of anise, cumin and lavender point back to Sullivans Cove spirit character again.
- Finish: The transition to finish is seamless, and more fruit notes take the wheel for a moment (salted cantaloupe and peaches) as floral nuances of chamomile and musk emerge. The finish is generous in length, malty, textural, and long after the last sip is gone sweet notes of coconut icing and warm tropical fruits linger in the air. Just lovely.
